
SALADS WITH GRAINOVA MILLETS(Foxtail, Jowar, Amranth)
PREPARATION
Take any one type of millet as per your choice. Wash & soak overnight or for 6 to 8 hours.
Pressure cook ½ cup of any of the above soaked millets with 2 cups of water for 3 whistles, open & cook for 10 to 15 mints till the water dries up & millets are cooked.
Ingredients
VEGETABLES
Onion, garlic, spring onions, cucumber, carrot, cabbage(green or red), broccoli, 3 kinds of peppers-green, red, yellow, tomatoes, cherry tomatoes, green peas, corn, pomegranate seeds
HERBS
Coriander, Mint, Parsley, Basil ( any of these)
SPICES REQD
Salt, pepper, chilli flakes, Jaggery powder or sugar or honey, lemon juice or vinegar or hung curd
DRESSINGS
1-Lemon vinaigrette dressing---
A tbsp. of olive oil, 1 tsp of lemon juice or vinegar, crushed garlic, salt, pepper, chilli flakes, a tsp of gud or jaggery powder; or honey or sugar, a tsp of soy sauce
2-Hung curd dressing—
1 cup hung curd, ½ tsp roasted cumin seed powder, 1 tsp crushed garlic, ½ tsp chilli flakes, 1 tsp parsley or basil or coriander leaves roughly torn, few mint leaves roughly torn, ½ tsp powdered sugar & salt to taste.
3- Groundnut dressing
2 tbsp soaked groundnut, 1 green chilli, a little piece of ginger, salt to taste, 2 tbsp water. Churn in blender to get a paste
Method
Mix the boiled millets with any of the above veggies, herbs & dressings of your choice, Sprinkle some pomegranate seeds on top. Delicious salad is ready.
